Tomato and Cucumber Salad

I guess that's a good name for it...

When we were in CO, Mom and I had a salad like this at a restaurant and really liked it. This week we started a diet (yes, another one) and we aren't eating any carbs. I'm just about to die for a potato. I won't even tell you how long it's supposed to be before I get to eat one. I'm trying not to think about it, but that's not working so well. Anyway, we need light side dishes, so I made this tonight.


All it is is tomatoes, chopped in large chunks, sliced cucumber, and thinly sliced red onion. You drizzle in a little olive oil and balsamic vinegar, and then sprinkle with salt and basil. Easy as pie (easier, actually,) and it's so very yummy! I think it would be better if it was made a little ahead of time so the flavors could marry (sounds good to me...) although it was great fresh, too!

Anyway, this is so delicious and easy, just thought I had to share! :)
